About Rhubarb

Rhubarb originally comes from Asia, where its dried roots were used for thousands of years as a highly valued and expensive medicinal herb. The Romans imported it via the River Volga and named it Rha barbarum – the barbarian plant from Rha – which later gave the plant its modern name. Although the roots remained a costly luxury item in Europe for a long time, it was not until the 19th century that people began eating the stalks. This became possible as sugar grew cheaper and more widely available, helping to balance the plant’s intensely sour taste. In the 1860s, rhubarb found its way into Danish kitchen gardens, where it quickly became a cherished sign of spring and a popular ingredient in cooking.
